How to Prepare
Fill your belly and your soul with a bowl of Vietnamese beef stew. Using Essence of Lotus Beef Stew soup base, it’s easier than ever to serve a bowl of layered, traditional flavors and slow-cooked beef. For maximum nap-ready fullness, finish the bowl off with steamy jasmine rice or a fresh baguette.
When shopping for ingredients, your local Asian market should have everything listed below. If you don’t have access to a quality market, you can still prepare the recipe using alternative ingredients from your local grocery store; for example, substituting standard sweet basil for Thai basil will work just fine.
For Two Medium Bowls
Ingredients:
- Essence of Lotus Beef Stew soup base — 1 packet
- Beef Brisket — 16oz, cubed
- Stew beef from your butcher is a great substitute if brisket isn’t available
- Carrot, Large — 2, peeled and diced
- Thai Basil — to taste
- Ketchup — 1 cup
To Prepare:
Cube and chop brisket and carrots. Set aside.
In a medium-sized saucepan or pot, add brisket and carrots. Add 2 tablespoons of Essence of Lotus Beef Stew soup base per half pound of beef. Pour in about 4 cups of water to cover beef and carrots, stir until soup base is mixed in.
Bring to a boil, reduce down to a simmer. Stir again and cover for 45 minutes to an hour, depending on your beef. When the beef is tender to the touch and carrots are cooked through, add 1 cup of ketchup to thicken. Replace lid and simmer for an additional 5 minutes.
The consistency of the stew should be thick, but liquid. Add more water or mix to adjust consistency and flavor to taste. Serve the stew in a bowl and top with basil.
Enjoy with a bowl of jasmine rice or a fresh baguette.
